MALBEC FERMENTATION FINALISED
2 weeks after harvesting we finished the fermentation process of our Malbec on Saturday and we got already residual sugar and the juice has transformed into alcohol by now. The Cabernet Sauvignon is still being fermented and we expect to conclude this process end of this week. Stay tuned for further updates and to learn more about how we will proceed after fermentation.

CABERNET SAUVIGNON- HARVESTED & PROCESSED
On Friday april 13 th we harvested 13.880 kilos of Cabernet Sauvignon. This season all winefarmers are hurrying to collect this grape, as unusual bad weather of the recent weeks has attacked the grapes with botrytis. We also had to seperate 2.300 liters of juice,as we found some minimum amount of botrytis in the seeds. In total 23% of juice was processed, which we hope will give us excellent quality.
In the meantime the Malbec is under full fermentation and we should see the outcome of the results in a couple of days.

FIRST CHARACTERISTICS OF OUR MALBEC WINE
The maceration process, which took approximately 3-4 days was successfully completed on april 9th. We extracted 25 % of juice and got a good colour and intense red fruit taste.

ANASTASIA- OUR FIRST VINTAGE
Anastasia our first child was born in Buenos Aires on april 4th at 11.25 pm. At the same moment some 1000 kms East at the foot of the Andes, our agronomist Mario and enologist Alvaro Espinoza were finishing harvesting and defining the recipee and formula for our first malbec wine. Anastasia was not only born on the same day while we were transfering the first grapes to the Winery, but she also brought the heaviest thunderstorm of the season. Miraculeously the hail and water did not harm our vineyard.

MALBEC HARVEST
This morning we started to harvest 14.000 kilograms of Malbec at the organic vineyard "Ojo del Vino". After almost a week of rain today we finally got excellent climatic conditions to hand pick the grapes. 3 trucks will be carrying the grapes to the neighbouring Winery "Permasur" later in the afternoon.
Once the grapes have been delivered at the Winery our Enologist team together with Mario will decide on the maceration process and implement the protocol ahead of the fermentation, which will start in approx. 3 days.
